• 2 eggs
  • 1 large clove garlic
  • ½ teaspoon salt
  • 3 cups grated zucchini, unpeeled
  • ¼ cup grated chees
  • ½ – ¾ cup gluten free flour blend
  • 1 teaspoon gluten free baking powder


Step 1
Beat the eggs together.

Step 2
Crush the garlic and add to the eggs with the salt.

Step 3
Add the zucchini, cheese and baking powder then stir in enough flour blend to make a batter of fritter consistency

Step 4
Lightly oil a cast iron frying pan with coconut oil and heat to a medium heat.  Drop spoonfuls of the mixture onto it.  Turn then when golden brown.  Lower the heat if necessary and cook until the centers are firm.
